Fresh Green Beans with Beef
Ingredients
2 lb. Fresh green beans, trimed, cut in half
1 Yellow onion, finely diced
½ lb. Beef, cut into medim dice
2 Tomatoes peeled, cut into medium dice
2 tsp. Salt
1 tsp. Sugar
2 tbsp. Tereyağ
Instructions
Sauté the beef in olive oil until browned, then add the onions. When the meat is softened, add the tomatoes and continue sautéing. Add the beans, salt and sugar. Cook over low heat, until the beans have softened, about 30 minutes, serve hot.
Etli Bezelye
Peas with Lamb
Ingredients
2 cups Fresh Peas
½ lb. Lamb, cut into medim dice
1 Yellow onion, finely diced
2 Tomatoes peeled, cut into medium dice
3 tbsp. Butter
2 tsp. Salt
Instructions
Sauté the lamb in olive oil until browned, then add the onions. When the meat is softened, add the tomatoes and continue sautéing. When the tomatoes have softened, add the peas and cook for about 5-6 minutes, then add the salt. Cover the lid, cook until the peas and lamb is fully cooked.
Note: If using canned peas, add the peas after tomatoes.
Terbiyeli Etli Kereviz
Marinated Celeriac with Lamb
Ingredients
4 Celeriac, peeled, cut into medim dice
½ lb. Lamb, cut into medim dice
2 tbsp. Butter
1 Yellow onion, finely diced
1 ½ tsp. Salt
½ cup Water, boiled
For the slurry
1 Lemon, juiced
1 Egg yolk
2 tbsp. Flour
Instructions
Sauté the onions in butter until softened, then add the beef. Add the celeriac and sauté for 5-6 minutes. Add the salt and water and cook until the celeriac is softened. In a small bowl; whisk the egg yolk, lemon juice, flour and ladleful of the cooking liquid. Add the slurry into the pot, cook for another 5 minutes, then take off the heat and serve.
Etli Taze Bakla
Fresh Broad Beans with Beef
Ingredients
2 lb. Fresh broad beans, trimmed, cut in half
½ lb. Beef, cut into medim dice
1 Yellow onion, finely diced
4-5 cloves Garlic, thinly sliced
2-3 tbsp. Olive oil
½ bunch Dill, chopped
½ cup Water, boiled
2 tsp. Salt
Instructions
Sauté the onions and garlic in olive oil, add the beef and cook until browned. Add the broad beans, water and salt. Cook until the broad beans are softened. Serve with dill on top, along with yoghurt.
Note: Prepare a large bowl, fill with water, add 1 tbsp. of flour and juice of 1 lemon. Keep the trimmed broad beans in the floured water until cooking time, in order to prevent them from discoloration. Strain before adding cooking.

Leek Stew with Ground Beef
Ingredients
2 lb. Leeks, cleaned, cut into thick slices
½ lb. Ground beef
1 Yellow onion, finely diced
2-3 tbsp. Butter
½ cup Water, boiled
2 tsp. Salt
Instructions
Sauté the onions and ground beef, add the leeks and continue sautéing. Add the water and salt, cook over low heat until the leeks have softened. Serve hot.
