Börülce Salatası
Black-eyed Pea Salad
Ingredients
2 cups Black-eyed peas (cowpeas), boiled
6-7 cloves Garlic, minced
1 Lemon, juiced
1 tsp. Salt
¼ cup Olive oil
2 tbsp. Pomegranate sour
¼ bunch, Parsley leaves, finely chopped
4 Roasted Capsicum peppers (red bell peppers)
Instructions
To prepare the dressing, combine garlic, lemon juice, pomegranate sour, salt and olive oil in a large bowl and whisk. Add the boiled peas, parsley and capsicum peppers, and mix well. Leave in the fridge for about 1-2 hours for the flavors to combine. Serve cold.
Yeşil Zeytin Salatası
Green Olive Salad
Ingredients
1 cup Green olives, seeds removed
½ cup Walnut meat, coarsely chopped
1 bunch Parsley leaves, chopped finely
2 Scallions, finely sliced
2-3 cloves Garlic, minced
1 tbsp. Red pepper paste
2-3 tbsp. Olive oil
1 Lemon, juiced
1 tsp. Salt (optional)
Instructions
In a large bowl, combine the olives, walnuts, parsley and scallions. In a separate bowl whisk the olive oil with lemon juice, garlic and pepper paste. Pour this dressing over the olives and mix well. Keep in the fridge for about 1-2 hours before service.
Yumurta Salatası
Egg Salad
Ingredients
6 Eggs, boiled and diced
3-4 Scallions, finely sliced
¼ bunch Parsley leaves, finely chopped
1 Lemon, juiced
2-3 tbsp. Olive oil
1 tsp. Salt
½ tsp. Black pepper
Ingredients
Prepare the dressing with whisking lemon juice with olive oil, salt and pepper. In a large bowl, combine the eggs, scallions and parsley. Pour over the dressing and gently mix, without mashing the eggs too much. Serve with bread.
Marul Salatası
Romaine Lettuce Salad
Ingredients
1 head Romaine lettuce, washed, sliced
1 Cucumber, peeled, sliced
1 Long green pepper, de-seeded, sliced
3 Scallions, sliced thinly
¼ Parsley, finely chopped
1 Tomato, peeled, diced
2-3 cloves of Garlic, minced
2-3 tbsp. Olive oil
½ tsp. Salt
Instructions
Combine the lettuce, cucumber, green peppers, scallions and parsley in a bowl. In a separate bowl combine the tomatoes, olive oil, garlic and salt. Add this to the lettuce bowl, mix well and serve.
Havuç ve Turp Salatası
Carrot and Radish Salad
Ingredients
2 Carrots, peeled, grated
2 Radishes, peeled, grated
¼ bunches Parsley, finely chopped
1 Lemon, juiced
2-3 tbsp. Olive oil
1 tsp. Salt (optional)
Instructions
On a large serving platter, on one half, put the grated carrot. On the other hand put the grated radish. In a small bowl prepare the dressing by mixing olive oil, lemon juice and salt if using. Pour this dressing over the grated salad and serve.
