Grilled Mince Meat Patties
Ingredients
1 lb. Ground beef & lamb
1 Yellow onion, grated
1 Egg
3-4 slices of Stale white bread, crusts removed
2 tsp. Salt
1 tsp. Black pepper
½ bunch Parsley, finely chopped
1 tbsp. Clarified butter / olive oil
½ cup Beef stock (optional)
Instructions
Combine all the ingredients, except clarified butter or olive oil, in a large bowl and mix to prepare the meat loaf. Take egg sized pieces from the meat loaf and shape into patties. Grease the grill or the skillet, and then cook the meat patties on both sides to a desired temperature. If using the beef stock, you may choose to brush the patties with the stock as you cook.
Hasanpaşa Köfte
Ground Beef Patties Filled with Mashed Potatoes
Ingredients
1 lb. Ground beef
1 Onion, large, grated
3slices of Stale white bread, soaked
1 Egg
2 tbsp. Butter
2 tbsp. Tomato paste
½ cup Water, boiled
2 tsp. Salt
1 tsp. Black pepper
For the mashed potatoes
5 Potatoes
1 tbsp. Butter
1 Egg
½ cup Milk
1 tsp. Salt
Instructions
Heat the oven to 356F. Boil the potatoes until softened. Mix the ground beef with grated onion, soaked bread, egg, salt and black pepper. Knead for about 10 minutes. Divide the mincemeat into 4 equal portions. Make patties and flatten them just slightly and place on an oven tray. Make an indent on the top part of the patties, add little pieces of butter to the tray and bake in the oven for about 25 minutes. Meanwhile, peel the potatoes and cut into small pieces, add back to the pot, turn on the heat and start mashing while adding the butter and milk and make a smooth mash. Put the mashed potato in to a piping bag fitted with a large nozzle. Take the meat patties from the oven and pipe equal amounts of mashed potato over the indent of the patties. Prepare a sauce by mixing tomato paste with hot water, and pour this on the tray. Put the tray back in the oven and cook for another 10-15 minutes until the potatoes have turned golden brown.

Egg-laced Fried Mince Meat Patties with Rice
Ingredients
1 lb. Ground lamb (ground beef may be substituted)
½ bunch Parsley leaves, finely chopped
3 tbsp. White rice
1 tbsp. Butter
2 tsp. Salt
1 tsp. Black pepper
Oil for frying
3-4 tbsp. Flour
4 Eggs, whisked
Instructions
Wash the rice and soak in warm water for 5-10 minutes. Boil the rice until softened then strain and set aside. Melt the butter and sauté only half of the ground lamb until fully cooked. Set aside to let it cool. In a large bowl, combine the cooked ground lamb, raw ground lamb, rice, salt, black pepper and parsley. Knead for 10 minutes. Make oval shaped patties that are the size of an egg. Heat the oil. Dip the meat patties in flour first then in egg and fry until golden brown. Keep the fried patties in a pot with a lid to keep warm. You may serve this dish alongside mashed potatoes.

Baked Meatloaf with Egg, Carrot and Peas
Ingredients
2 lb. Ground lamb (from the leg)
2 slices of Stale white bread, crusts removed
2 Onions, grated
3 Eggs
2 tsp. Black pepper
3 tsp. Salt½ bunch Parsley, finely chopped
2 Egg whites, whisked (for the top)
For the filling
2 Carrots, peeled, boiled
3 Eggs, boiled, peeled
3 tbsp. Peas, boiled
For the sauce
2 tbp. Clarified butter
1 tbsp. Tomato paste
½ cup Water
Instructions
Heat the oven to 320F. Combine the ground lamb, with parsley, stale bread, onion, 3 eggs, salt and black pepper. Knead for about 10 minutes. Flatten the ground lamb mixture on a work surface, in the shape of a rectangle. Lay the eggs, carrots and peas in the middle, and then roll the ground meat mixture over the vegetables and eggs to make a log shaped meatloaf. Place the meatloaf onto a greased oven tray, brush the egg whites all over (this will prevent the meatloaf from cracking during the cooking process) Bake in the oven for about 40 minutes. During cooking, baste the loaf with the cooking liquids from time to time. For service slice into 1 in. thick slices, and place on a serving platter. Combine the remaining cooking juices on the tray with tomato paste and water in a saucepan and cook until heated. Serve this sauce over the sliced meatloaf.
